1 1/2 cups flour (I used whole wheat)
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup butter or margarine, softened
1/2 cup vegetable oil
2 eggs
1 tsp vanilla
3 cups uncooked old-fashioned oats
1 pint (2 cups) fresh blueberries (I used frozen, turned out fine!)
Preheat oven to 350 degrees. Lightly spray 9 x 13 pan with cooking spray.
In a small bowl, whisk together the flour, cinnamon, baking soda, and salt until well mixed.
In a large bowl with an electric mixer at medium speed, beat together the brown sugar, granulated sugar, and butter until fluffy. Beat in the oil, eggs, and vanilla. With a woodedn spoon, mix in the flour mixture until blended. Stir in the oats and blueberries.
Use a spatula to spread the batter evenly in the pan.
Bake until golden brown and a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool completely. Cut into 24 bars.
Enjoy!!
Blessings,
